Characteristics

– Entire fruitbody yellow.
– Cap surface smooth, often wavy along the cap edge.
– Cap underside with decurrent and forked ridges.
– Flesh yellowish-white, with a slightly peppery taste and fruity smell.

Ecology

Grows in both deciduous and coniferous forests, common throughout Europe. Also found in mountain birch forests. Appears as early as June–July, and the season extends well into late autumn until the temperatures drop below freezing.

Notes

A good and popular edible mushroom. Best to blanch and freeze. Drying may cause it to become bitter in taste.

Similar species

Hygrophoropsis aurantiaca has narrow and closely spaced gills, inedible.
C. pallens is paler and more robust, edible.
Cuphophyllus pratensis has thick sparse gills under the cap, edible.
